Recipe: Matcha Mint Smoothie


Matcha has many benefits but it seems it is especially beneficial for women over 40. According to an article published by Harvard School of Public Health matcha has been linked to improved cognitive health in older women, healthy changes to the gut microbiome and lower stress levels. There have also been studies suggesting that the drink might help slow premature aging and reduce risk of certain cancers, but more research is needed.

Here is a delicious smoothie recipe using Matcha to kick start your day pre or post exercise. The matcha gives you a boost, the protein in the pistachios helps build and repair muscle, the coconut milk has anti-inflammatory properties, and the mint gives it a lovely zing. I particularly like this one in the warmer weather which thankfully we are now getting in the UK!

 

Matcha Mint Smoothie

 

Ingredients

2 tsp matcha green tea powder

400 ml can of coconut milk

Large handful of spinach leaves

Small handful of fresh mint leaves

50 g raw shelled pistachios (soaked in cold water for at least one hour)

1 tsp of organic vanilla bean paste or extract

2 medjool dates

 

Method

Mix the matcha powder with 2 tbsp of hot water in a mug. Set aside to cool.

Pop the coconut milk, cooled green tea, drained pistachios, spinach, dates, vanilla and mint leaves in a blender and blend on high until smooth. Add ice if you like it chilly!

Pour and decorate with some pistachios and a sprig of mint before serving.
